Colombé-Le-Sec - Abbaye There, in a land of hidden valleys, inhabited by the protective spirit of Charles de Gaulle, the Clairvaux monks, in 1194, decided to gather the grapes, hand them over to the vaults of the great cellar, turn them into wines and later, into champagne. For the last eight centuries in Colombé le Sec, the gothic columns of the monastic cellar protect the harvests. Today, the Calon-Egger family raise them into elegant champagne, heir of the Aube's deep countryside history.
